*8 There are no soap and/or paper towels several hand wash sinks throughout. *14 *The three compartment sink was not setup properly. All wares must be wash, rinsed then sanitized. After education, sink was properly setup. Provide test strips to verify sanitizer residual.

Can opener, potato slicer and skewers have food debris buildup. Detail clean, sanitize and maintain. Ensure all wares are clean to sight snd touch after the washing/sanitizing process.

-Basement ceiling tiles missing throughout ware washing, equipment storage and prep areas. Replace with smooth, nonporous and easily cleanable ceiling tiles.

-Excessive clutter, unused and broken equipment through basement storage areas. Remove clutter and debris.

General Remarks
This inspection serves as a compliance inspection and Administrative Meeting to determine further legal action and possible license suspension. Failure to correct the above violations and adhere to the timelines set forth will result in an Administrative Hearing.

This inspection is subject to a regulatory fee. A follow up inspection will be conducted and is subject to a regulatory fee.

Notes:
-All assessed regulatory fees must be paid in full for license renewal.
-All kitchen and ware washing staff must wear a hair restraint
-Keep grease collection cans lidded.
-Mop sink is inaccessible, move items so sink can be easily used.
-Leak observed at prep sink in basement, repair
-All food must be stored at least 6" from the floor (walk-in freezer)
-Ware washing machine and pre-rinse sink does not appear to be connected to the grease trap, connect.
